Ingredients

250 grams flour
150 grams butter (chilled)
80 grams water (chilled)
salt
250 grams ricotta cheese
250 grams pesto sauce
80 grams parmesan cheese (grated)
2 eggs
cherry tomatoes

Directions

1To prepare the pie crust:
2Rub the butter with the flour using the tips of your fingers until the mixture resembles oatmeal.
3Then add a pinch of salt and the cold water, a little at a time, and knead quickly into a ball.
4Cover the dough in plastic wrap and refrigerate for 1 hour.
5Roll out the dough and place it in a buttered and floured pie plate.

8Preheat the oven to 180C.
9Cream the ricotta cheese in a bowl, add the pesto sauce, grated cheese, and eggs, and stir until the mixture is creamy.
10Pour the mixture in the pie crust, add the cherry tomatoes, cut in half and bake for approximately 25 to 30 minutes.
