In this classic Italian dessert, half of the mixer dough is used to line the cake pan and the rest is crumbled over the filling as a topping. For the filling, ricotta cheese is combined with vin Santo (or other sweet dessert wine) and chocolate chips. Pressing the ricotta through a sieve helps keep the filling from being too dense, and allows the ingredients to be more evenly distributed. Let cool completely before serving, generously dusted with sugar.

Ingredients

  • 180 grams sugar
  • 250 grams flour
  • 1 tablespoon cornflour
  • 150 grams butter (softened)
  • 1 egg
  • 1 teaspoon baking powder
  • salt
  • 250 grams ricotta cheese
  • 130 grams sugar
  • 1 egg
  • 25 milliliters vin santo (may substitute with any sweet dessert wine)
  • 0.6 grams chocolate chips (depending on how much you like chocolate)
  • powdered sugar

Directions

  1. Preheat the oven to 170C.
  2. Butter and flour a round springform pan.
  3. Place the flour in the mixer bowl with the cornflour, sugar, butter, egg, baking powder and a pinch of salt, and mix for 30 seconds at medium-high speed.
  4. Knead in the mixer for 40 seconds.
  5. Remove the dough from the bowl and knead briefly by hand.
  6. Divide the dough into 2 parts, line the pan with one of the two parts of dough.
  7. Prepare the filling in a bowl, put the ricotta cheese through a sieve and cream it with the sugar and the egg.
  8. Add the sweet wine and the chocolate chips.
  9. Place the filling on the dough in the pan, leaving a small space around the border and crumble the remaining dough on top and around the border.
  10. Bake for approximately 40 to 45 minutes (the pie should be lightly golden).
  11. Cool completely and sprinkle with powdered sugar before serving.

This was a sweet treat. Next time I will cut both portions of sugar by a third and leave off the powdered sugar as well. However, the pie was tasty and worth the calories to enjoy. Another alternative to mixing in the chocolate chips in the batter is to sprinkle a few on top for a layered pie. Speaking of mixing, I suggest using a mixer for this one so the ingredients are well blended. Sometimes I can get away with mixing by hand, but with the ingredients being mostly the same color I think it would be difficult to try it without the power of a machine.
