Description

In this classic Italian dessert, half of the mixer dough is used to line the cake pan and the rest is crumbled over the filling as a topping. For the filling, ricotta cheese is combined with vin Santo (or other sweet dessert wine) and chocolate chips. Pressing the ricotta through a sieve helps keep the filling from being too dense, and allows the ingredients to be more evenly distributed. Let cool completely before serving, generously dusted with sugar.

Ingredients

  • 180 grams sugar
  • 250 grams flour
  • 1 tablespoon corn flour
  • 150 grams butter (softened)
  • 1 eggs
  • 1 teaspoon baking powder
  • salt
  • 250 grams ricotta cheese
  • 130 grams sugar
  • 1 eggs
  • 25 milliliters vin santo (may substitute with any sweet dessert wine)
  • 3/5 gram chocolate chips (depending on how much you like chocolate)
  • powdered sugar

Directions

  1. 1Preheat the oven to 170C.
  2. 2Butter and flour a round springform pan.
  3. 3Place the flour in the mixer bowl with the cornflour, sugar, butter, egg, baking powder and a pinch of salt, and mix for 30 seconds at medium-high speed.
  4. 4Knead in the mixer for 40 seconds.
  5. 5Remove the dough from the bowl and knead briefly by hand.
  6. 6Divide the dough into 2 parts, line the pan with one of the two parts of dough.
  7. 7Prepare the filling in a bowl, put the ricotta cheese through a sieve and cream it with the sugar and the egg.
  8. 8Add the sweet wine and the chocolate chips.
  9. 9Place the filling on the dough in the pan, leaving a small space around the border and crumble the remaining dough on top and around the border.
  10. 10Bake for approximately 40 to 45 minutes (the pie should be lightly golden).
  11. 11Cool completely and sprinkle with powdered sugar before serving.
