Castagnole di ricotta — Italian ricotta fritters — is a pretty basic recipe, this one made with cake flour to keep the interior cake-like and crumby. Rum and chocolate chips infuse it with flavor. After they're fried, the puffed, golden orbs are sprinkled with powdered sugar, though you could also shower them with cinnamon sugar or serve them with jam.

Ingredients

  • 250 grams ricotta cheese
  • 180 grams cake flour
  • 4 tablespoons rum
  • 130 grams sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • salt
  • 60 grams dark chocolate chip
  • powdered sugar

Directions

  1. In a bowl, combine the cheese, flour, rum, sugar, eggs, vanilla, baking powder, and a pinch of salt. Mix well until the batter is smooth and uniform in consistency.
  2. Add the chocolate chips and stir.
  3. Bring the fryer to 356 degrees Fahrenheit.
  4. Use a spoon to add the batter into the fryer.
  5. Remove the fritters from the fryer once they have puffed out and are golden in color using a slotted spoon. Drain on paper towels.
  6. Serve hot, sprinkled with powdered sugar.

I’ve had a deep fryer sitting in the garage for two years and decided it was time to use it! I was thrilled to see how quickly this batter went together and the flavors blended well. One tip I have for the novice like me is have one person scoop the fritters from the oil and another sprinkling with sugar! They go fast in the fryer and off the plate!
