Description

Castagnole di ricotta — Italian ricotta fritters — is a pretty basic recipe, this one made with cake flour to keep the interior cake-like and crumby. Rum and chocolate chips infuse it with flavor. After they're fried, the puffed, golden orbs are sprinkled with powdered sugar, though you could also shower them with cinnamon sugar or serve them with jam.

Ingredients

  • 250 grams ricotta cheese
  • 180 grams cake flour
  • 4 tablespoons rum
  • 130 grams sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • salt
  • 60 grams dark chocolate chips
  • powdered sugar

Directions

  1. 1In a bowl, combine the cheese, flour, rum, sugar, eggs, vanilla, baking powder, and a pinch of salt. Mix well until the batter is smooth and uniform in consistency.
  2. 2Add the chocolate chips and stir.
  3. 3Bring the fryer to 356 degrees Fahrenheit.
  4. 4Use a spoon to add the batter into the fryer.
  5. 5Remove the fritters from the fryer once they have puffed out and are golden in color using a slotted spoon. Drain on paper towels.
  6. 6Serve hot, sprinkled with powdered sugar.
