Description

This ricotta cake is not to be confused with ricotta cheesecake, which has a creamy consistency. Here, the ricotta is mixed with flour, sugar, and yeast to make a true cake that rises in the oven and has a wonderful vanilla flavor imparted by vanilla-bean seeds. The cake is delicious on its own, dusted with confectioners' sugar, or coated with melted white chocolate, as here, with white chocolate shavings made by scraping a bar with a sharp paring knife.

Ingredients

  • 400 grams ricotta cheese
  • 400 grams flour
  • 400 grams sugar
  • 1/2 vanilla beans
  • 10 grams yeast
  • milk chocolate
  • white chocolate

Directions

  1. 1Preheat oven to 190 degrees Celsius.
  2. 2Add the cheese, flour, sugar, vanilla bean, and yeast in a bowl and mix until smooth.
  3. 3Pour the batter into a 25-centimeter round cake pan lined with parchment paper.
  4. 4Cover with aluminum foil and bake for 50 minutes.
  5. 5Remove the foil and cook for another 10 to 15 minutes until completely cooked.
  6. 6Cover with melted chocolate and sprinkle with white chocolate flakes.
