  • 8 ounces dark chocolate (chopped)
  • 4 eggs (separated)
  • 1 cup heavy cream (lightly whipped)
  • 2 tablespoons strong coffee
  • raspberries (to decorate)

Directions

  1. Place chocolate in a heatproof bowl. Heat over a double boiler, stirring, until melted and smooth. Remove from heat. Whisk in egg yolks, 1 at a time, until combined. Gently fold in cream then coffee. Whip egg whites to soft peaks and fold in. Distribute between serving glasses and chill for 1 hour, until set.
  2. Decorate with raspberries and rolled wafers before serving.
