  • 3/4 cup cooked rice
  • 1/2 cup beans
  • 1/3 cup oaxaca cheese
  • 1 tablespoon mole paste
  • 3 tablespoons water

    Directions

    1. Mash the beans together with a little of their broth and mix together with the rice until it is able to form a ball.
    2. Place on an oven-safe plate, flattening slightly to form a loaf shape. Sprinkle with cheese and broil until melted.
    3. Mix the mole paste with the water in a separate small bowl.
    4. Serve the rice and bean patty along with the mole sauce.
