This Rice with Vegetables dish could even be a main course with all the hearty, heathy vegetables added. - 1 Tbsp. water
- 1 Tbsp. soy sauce
- 1/2 Tbsp. extra virgin olive oil
- 1 zucchini (cut into half moons)
- 100 grams mushrooms (finely chopped)
- 3 Tbsp. onion (finely chopped)
- 1 cup brown rice (cooked)
- 1 tomato (small, chopped)
- 1/2 carrot (grated)
- 15 almonds (coarsely chopped)

Directions
- In a large saucepan or a wok, heat the water, soy sauce, and olive oil.
- Once heated, add the zucchini, mushrooms, and onion, and cook over high heat for 5 minutes.
- Add the rice, tomato, and carrot. Cook for 3 additional minutes.
- Sprinkle the almonds on top and serve.
