Ingredients

  • 1 tablespoon water
  • 1 tablespoon soy sauce
  • 1/2 tablespoon extra virgin olive oil
  • 1 zucchini (cut into half moons)
  • 100 grams mushrooms (finely chopped)
  • 3 tablespoons onion (finely chopped)
  • 1 cup brown rice (cooked)
  • 1 tomato (small, chopped)
  • 1/2 carrot (grated)
  • 15 almonds (coarsely chopped)

    Directions

    1. In a large saucepan or a wok, heat the water, soy sauce, and olive oil.
    2. Once heated, add the zucchini, mushrooms, and onion, and cook over high heat for 5 minutes.
    3. Add the rice, tomato, and carrot. Cook for 3 additional minutes.
    4. Sprinkle the almonds on top and serve.
