Description

Rice is a versatile side dish or base to any meat or fish. And brown rice provides extra nutrients not found in white rice. This Rice with Vegetables dish could even be a main course with all the hearty, heathy vegetables added. Not only will your taste buds love the savory and sweet flavors of the vegetables with soy sauce base, they also will love all the different textures. Enjoy!

Ingredients

1 tablespoon water
1 tablespoon soy sauce
1/2 tablespoon extra-virgin olive oil
1 zucchini (cut into half moons)
100 grams mushrooms (finely chopped)
3 tablespoons onions (finely chopped)
1 cup brown rice (cooked)
1 tomatoes (small, chopped)
1/2 carrots (grated)
15 almonds (coarsely chopped)

Directions

1In a large saucepan or a wok, heat the water, soy sauce, and olive oil.
2Once heated, add the zucchini, mushrooms, and onion, and cook over high heat for 5 minutes.
3Add the rice, tomato, and carrot. Cook for 3 additional minutes.
4Sprinkle the almonds on top and serve.
