Plain old rice pudding went off the table years ago. This firm pudding brings unique coconut milk and lime zest elements that permeate the slowly-cooked rice with fresh, buttery tastes. Its milky cream is offset by the firm, yet soft, grains of rice. Using a real vanilla stock over extract intensifies the flavor profile by sweeting the dish naturally.

Ingredients

  • 1 vanilla pod
  • 250 grams rice (round)
  • 400 milliliters coconut milk
  • 200 milliliters whole milk
  • 150 grams brown sugar (or granulated sugar)
  • 1 lime zest
  • 1 egg yolk

Directions

  1. Split the vanilla pod lengthwise with a knife.
  2. Quickly rinse the rice in cold water.
  3. Heat the coconut milk, milk, and brown sugar.
  4. Add the vanilla pod, and then the rice.
  5. Cook over low heat for 25 minutes to reach a creamy preparation, and rice is tender.
  6. Stir regularly.
  7. Add the lime zest (use a grater to get very thin zest), and the egg yolk.
  8. Stir and let it cool down.

I adored the zest that the lime added to the rice, along with the rich coconut taste that the coconut milk provided. I will never go back to plain, bland, and boring rice ever again now that I have this recipe.
