Made with coconut milk, this rice pudding is lightly sweetened with honey and features the warm flavor of fresh vanilla. Topped with nectarines and peaches, this is a wonderfully tasty and healthy breakfast, snack, or dessert option.

Ingredients

  • 200 grams arborio rice (or white, short-grained rice)
  • 750 milliliters water
  • 300 milliliters coconut milk
  • 100 grams granulated sugar
  • 200 grams honey
  • 1 vanilla pod
  • 2 nectarines
  • 2 peaches

Directions

  1. Place the rice and water in a medium-sized saucepan, over medium heat, and bring to a boil.
  2. Cook for 10 minutes, or until the water is absorbed.
  3. Add the coconut milk and sugar, mix well.
  4. Cook for 5-8 minutes on low heat, covered.
  5. Place the honey and vanilla pod in a small saucepan over low heat, caramelize.
  6. To serve, arrange the nectarines and peaches on top, cover with honey and vanilla.
  7. Serve hot or cold,

Rice pudding is one of our favorites and this was very similar. The only change I made was to add a pinch of cinnamon stirred into the rice mixture. Our grandchildren loved it!
