Description

Made with coconut milk, this rice pudding is lightly sweetened with honey and features the warm flavor of fresh vanilla. Topped with nectarines and peaches, this is a wonderfully tasty and healthy breakfast, snack, or dessert option.

Ingredients

200 grams arborio rice (or white, short-grained rice)
750 milliliters water
300 milliliters coconut milk
100 grams granulated sugar
200 grams honey
1 vanilla pods
2 nectarines
2 peaches

Directions

1Place the rice and water in a medium-sized saucepan, over medium heat, and bring to a boil.
2Cook for 10 minutes, or until the water is absorbed.
3Add the coconut milk and sugar, mix well.
4Cook for 5-8 minutes on low heat, covered.
5Place the honey and vanilla pod in a small saucepan over low heat, caramelize.
6To serve, arrange the nectarines and peaches on top, cover with honey and vanilla.
7Serve hot or cold,
