Description

There's nothing tricky about making these comforting rice "muffins," save the fact that the rice cooks in milk, sugar and orange zest until all of the liquid is absorbed. After adding egg yolks and rum, plus beaten egg whites, the treats bake in the oven until the tops are lightly browned. A shower of powdered sugar ties the flavors together. Once you make them, comment on your experience in the thread below.

Ingredients

150 grams rice
70 grams sugar
30 grams butter
1 orange
800 milliliters milk
2 eggs (separated)
2 tablespoons rum
salt

Directions

1Preheat the oven to 180C.
2Cook the rice in the milk for approximately 30 minutes, stirring it continuously so it does not stick.
3After it has been cooking for 20 minutes, add the sugar, butter, a pinch of salt, and the grated orange peel. When it is done, the milk should be completely absorbed. Let it cool.
4Beat the egg whites to stiff peaks and set aside.
5Add the egg yolks and the rum to the rice mixture, then fold in the egg whites.
6Line the muffin pan with wax paper muffin liners coated with breadcrumbs, and fill with the rice mixture.
7Bake for approximately 30 minutes, until golden on top.
8Remove the treats from the oven and serve warm, sprinkled with powdered sugar.
