There's nothing tricky about making these comforting rice "muffins," save the fact that the rice cooks in milk, sugar and orange zest until all of the liquid is absorbed. After adding egg yolks and rum, plus beaten egg whites, the treats bake in the oven until the tops are lightly browned. A shower of powdered sugar ties the flavors together. Ingredients

  • 150 grams rice
  • 70 grams sugar
  • 30 grams butter
  • 1 orange
  • 800 milliliters milk
  • 2 eggs (separated)
  • 2 tablespoons rum
  • salt

Directions

  1. Preheat the oven to 180C.
  2. Cook the rice in the milk for approximately 30 minutes, stirring it continuously so it does not stick.
  3. After it has been cooking for 20 minutes, add the sugar, butter, a pinch of salt, and the grated orange peel. When it is done, the milk should be completely absorbed. Let it cool.
  4. Beat the egg whites to stiff peaks and set aside.
  5. Add the egg yolks and the rum to the rice mixture, then fold in the egg whites.
  6. Line the muffin pan with wax paper muffin liners coated with breadcrumbs, and fill with the rice mixture.
  7. Bake for approximately 30 minutes, until golden on top.
  8. Remove the treats from the oven and serve warm, sprinkled with powdered sugar.

These treats are like rice pudding in muffin form. The rice ingredient is cooked in a similar way to rice pudding before it is incorporated into the dry ingredients. They are made even better with the addition of rum and orange peel. A lot of cooking is required, but the result is well worth the effort.
