Description

It can be difficult to use leftover rice, but this recipe is about the change that. The cooked rice is mixed with mozzarella cheese, egg, and oregano to form the crust for this tart. Once the base is cooked, it is filled with tomato sauce, caramelized onions, and creamy goat cheese to form a simple and flavorful tart. Broiling the tart gives the cheese a nice browned finish and brings all the flavors together.

Ingredients

  • 2 cups cooked rice
  • 1 eggs
  • 1/2 cup shredded mozzarella cheese
  • 1/2 teaspoon oregano (ground)
  • 1/4 cup onions (caramelized)
  • shredded mozzarella cheese
  • goat cheese (crumbled, optional)
  • 1/2 cup tomato sauce

Directions

  1. 1Mix the rice, egg, cheese, and oregano together. Place into a greased pie pan. Microwave 3 minutes on medium high.
  2. 2Remove from the microwave and fill the crust with the tomato sauce, cheese, onions, and goat cheese.
  3. 3Broil for 10 minutes, until the cheese browns. Cool 15 minutes before serving.
