Whole grain rice is a hearty and healthy side dish that can take on many flavors. This Rice Salad with Vegetables and Feta Cheese not only tantalizes the taste buds, but also could be served up as a main dish. It is flavorful and packed with flavor. Some ingredients in this recipe are green bell pepper, carrots, onions, edamame, coriander, feta cheese, jalapeno chilies, vinaigrette, lemon and olive oil. Enjoy!

Ingredients

  • 2 cups whole grain rice (previously cooked and cooled)
  • 1/2 green bell pepper (finely chopped)
  • 1 carrot (finely chopped)
  • 3 tablespoons onion (finely chopped)
  • 1 cup edamame (cooked)
  • 2 tablespoons coriander (finely chopped)
  • 100 grams feta cheese
  • jalapeno peppers (Optional: finely chopped)
  • vinaigrette (1 tbsp. or as much as you like)
  • 1 lemon
  • 2 tablespoons olive oil
  • salt
  • pepper

Directions

  1. Mix the rice, bell pepper, carrots, onion, edamame, coriander, cheese, and jalapeno peppers in a large bowl.
  2. Mix the lemon juice, olive oil, vinaigrette, salt and pepper in a bowl and mix them together with a whisk.
  3. Pour the dressing into the bowl with the rice and mix all of the ingredients together.
  4. Serve immediately or refrigerate for 1 hour before serving.

I am used to cold pasta salads, and rarely eat cold rice salads. This was very good and I am glad that I tried it. I had red and yellow bell peppers, in addition to green so I added them to the mix as well. If you’re using the jalapenos, remember to seed them first. I like the little kick it gives this salad.
