Ingredients

2 cups whole grain rice (previously cooked and cooled)
1/2 green bell pepper (finely chopped)
1 carrots (finely chopped)
3 tablespoons onions (finely chopped)
1 cup edamame (cooked)
2 tablespoons coriander (finely chopped)
100 grams feta cheese
jalapeno chilies (Optional: finely chopped)
vinaigrette (1 tbsp. or as much as you like)
1 lemon
2 tablespoons olive oil
salt
pepper

Directions

1Mix the rice, bell pepper, carrots, onion, edamame, coriander, cheese, and jalapeno peppers in a large bowl.
2Mix the lemon juice, olive oil, vinaigrette, salt and pepper in a bowl and mix them together with a whisk.
3Pour the dressing into the bowl with the rice and mix all of the ingredients together.
4Serve immediately or refrigerate for 1 hour before serving.
