Very delicious! I suggest increasing the sugar by possibly as much as 1:1.5 ratio, but it was amazing as is!! Absolutely lovely texture and everything!

Excellent! I used Botan short grain rice (Japanese type rice. We buy it in 15 lb bags), changed to brown sugar and reduced it to scant 1/4 C, increased vanilla by 1/2 tsp. I tempered the eggs mixed with vanilla with some of the hot rice/milk mixture. Instead of standing and stirring, I started the rice, milk, salt and sugar mixture in a covered pot over the extra low electric burner setting before I began cooking dinner. The mixture was thick and hot just as we finished eating dinner. The only mystery is how do you tell when the eggs are sufficiently cooked?

it was simple and easy. i exchanged milk with cocnut milk and used raw sugar. it was very good.
