Ingredients

2 cups water
salt
1 lemon (zest)
1 tablespoon margarine
170 grams rice
1 1/2 liters skim milk
250 grams sugar
ground cinnamon (for sprinkling)

Directions

1In a large saucepan, heat water, salt, lemon peel, and margarine and bring to a boil.
2Add the rice and stir.
3Let grains expand for a few minutes. In a small saucepan, heat milk.
4When the water has almost fully evaporated, add about 1/3 of the hot milk.
5Stir constantly to prevent the rice from sticking to the bottom of the pan.
6Gradually add remaining milk and keep stirring.
7When almost cooked, add sugar and cook for a few more minutes, stirring carefully, so that rice grains do not break.
8Remove lemon peels and place in serving dish.
9Let cool.
10To serve, garnish with cinnamon.
