  • 1 cup long grain rice
  • 1/2 cup onion (minced)
  • 2 tsp. butter
  • 2 cups chicken broth
  • 1/4 tsp. seasoned salt
  • 10 oz. frozen peas
  • 1/4 cup roasted cashews (lightly salted)
  • fresh cilantro (optional)

    Directions

    1. In a large skillet with a lid, saute rice and onion in the butter until onion is almost translucent. Add chicken broth and seasoned salt, bring to a boil, cover and simmer until rice is tender, about 12-15 minutes. Remove from heat. Stir in frozen peas and cashews, re-cover and let stand 10 minutes.
    2. Garnish with fresh cilantro sprigs, if desired.
