Description

If you love cake and rice pudding, you've come to the right place since this classic Italian hybrid (torta di riso) with crushed almonds and candied citrus zest offers the best of both worlds. Add a dash of orange liquor, such as Grand Marnier, to really make it special. Light and delicious, it gets sprinkled with powdered sugar post-baking. Consider using arborio or carnaroli rice, as they are rich in starch and make for a smooth, appealing texture.

Ingredients

  • 100 grams almonds (sweet)
  • 4 almonds (bitter)
  • 30 grams fruit (candied citrus, diced)
  • 1 liter milk
  • 200 grams rice
  • 150 grams sugar
  • 1 eggs
  • 1 egg yolks
  • 1 lemon
  • salt
  • bread crumbs
  • powdered sugar

Directions

  1. Preheat the oven to 95 degrees Celsius.
  2. Peel and blanch the almonds and crush in a mortar with 2 tablespoons of sugar.
  3. Cook the rice in the milk about 20 minutes.
  4. Add the almonds, sugar and candied fruit.
  5. When the mixture is cold, add the eggs and apinch of salt.
  6. Place in a greased baking pan and sprinkled with breadcrumbs.
  7. Bake for about 10 minutes or until just set. Allow to cool.
  8. Cut into almond shapes, and when ready to serve, sprinkle with powdered sugar.
