This cake recipe is easy enough for even the most inexperienced of home bakers, and it calls for just six ingredients. You may not have rice flour on hand, but a trip to the nearest natural foods store will provide you with that, and many supermarkets also carry rice flour in the baking aisle. When unmolding, be careful not to break the delightfully crunchy layer of sugar that forms on top during baking.
- 250 grams sugar
- 150 grams rice flour
- 100 grams wheat flour
- 100 grams oil
- 5 eggs
- 1 teaspoon baking powder
- sugar (for sprinkling)
- Preheat the oven to 356°F. Grease a round pan with margarine and coat with flour. Set aside.
- Place the eggs, oil and sugar in a bowl and beat with the mixer until creamy.
- Gradually add the two flours and the baking powder. Beat until dough is a fluffy and creamy.
- Place dough in prepared pan and sprinkle generously with sugar. Bake for 30 minutes, checking so as not to over bake. Remove from oven. Cool for 5 minutes before removing from pan so as not to crack the sugar topping.
