Soaking the riblets overnight is the key here. The meat turns out tender and moist. I leave out the tablespoon of salt though since soy sauce is plenty salty. Make double the sauce too. The meat soaks it in pretty well and I’m going for messy, lick-your-fingers ribs. I tried substituting white sugar with all natural agave syrup once, and the flavor was a little different but still good.
