Rhubarb and Strawberry Crumble

  • 1 pound rhubarb (trimmed, washed and cut into 1-inch lengths)
  • 1 pound strawberries (whole, hulled)
  • 1/2 cup sugar
  • 1/2 cup flour
  • 8 tablespoons butter (chopped)
  • 1/2 cup pistachios (chopped)

    Directions

    1. Preheat the oven to 350°F. Lightly grease 6 shallow 1-cup ramekins.
    2. Combine rhubarb, strawberries and 1/2 cup of the sugar in a large bowl. Spoon into prepared dishes.
    3. For the crumble, sift flour into a bowl. Using fingertips, rub in butter until mixture resembles breadcrumbs. Stir in pistachios and remaining 1/3 cup sugar. Sprinkle evenly over fruit in each dish.
    4. Bake 15-20 mins, until golden. Serve warm.
