This rhubarb and raspberry jam is the perfect recipe to make in summer when rhubarb and raspberries are fresh. The recipe requires only 6 ingredients and takes about 40 minutes to make. If you make a big batch, you can store the extras in your pantry. You will be so happy to find a jar of this vibrant jam in your pantry in the middle of winter, so you can get a bit of summer freshness in the dead of winter.

Ingredients

  • 7 stalks rhubarb
  • 250 grams sugar
  • 100 grams raspberries
  • 120 milliliters water
  • 1 lemon juice
  • 1 teaspoon ginger powder

Directions

  1. Wash the rhubarb stalks, and remove the tips.
  2. Then, cut into slices, not too thin.
  3. In a saucepan, add the rhubarb, sugar, raspberries, and water.
  4. Simmer on low heat, stirring occasionally.
  5. After 20 minutes, add the lemon juice and ginger, and keep stirring until desired consistency is obtained.
  6. Remove from heat, pour in sterilized jars, and cover. Turn jars upside down for a few minutes to create a natural vacuum.

This is not a shelf stable recipe. If you make it it should be stored in the refrigerator. It does not follow safe canning procedures.

This is a 5 star jam for sure. The rhubarb gives it a very sour taste while the raspberries and ginger tend to lighten up the sourness and add a more distinctive flavor. When I make it next time I will add a touch of sugar to lessen the sour taste.
