Soft, spiced ginger cookies just like grandma used to make... except with no refined sugar!

Ingredients

  • 3/4 cup unsalted butter (softened)
  • 1 cup coconut palm sugar
  • 1 egg
  • 1/4 cup molasses
  • 2 teaspoons vanilla extract
  • 2 1/3 cups all purpose flour
  • 1 1/2 teaspoons baking soda
  • 2 1/2 teaspoons ground ginger
  • 1 teaspoon pumpkin pie spice (or cinnamon)
  • 1/2 teaspoon salt

    Directions

    1. Line two baking sheets with parchment paper or silicone baking mats. Set aside.
    2. Place the butter and coconut palm sugar in a medium bowl. Use a hand mixer to beat on medium speed until well combined, about 1 minute. Add the egg, molasses, and vanilla extract and continue to beat for 30 seconds, until smooth.
    3. Sift the flour, baking soda, spices, and salt into the bowl. Beat on low speed, scraping down the sides of the bowl with a rubber spatula as needed, until a smooth dough forms.
