Made with sun-dried tomatoes, pine nuts, and plenty of garlic, this homemade red pesto sauce is bursting with flavor. Make your favorite variety of pasta and serve this scrumptious pesto atop the pasta. Sprinkle with freshly grated parmesan and freshly ground pepper for an elegant, yet surprisingly simple, Italian meal. This red pesto is vegan and vegetarian friendly and lactose free.

Ingredients

  • 200 grams pasta
  • 150 grams sun-dried tomatoes (whole)
  • 3 garlic cloves (finely diced)
  • 90 grams pinenuts (finely diced)
  • 150 milliliters olive oil
  • salt
  • ground black pepper
  • paprika (optional)

Directions

  1. Boil the pasta according to package directions.
  2. Put the tomatoes in a little water and simmer for 20 minutes until they are rehydrated. Drain and finely dice.
  3. Mix the diced sun-dried tomatoes, garlic, and pine nuts together well, and add olive oil little by little until you have reached the consistency of a sauce.
  4. Salt and pepper to taste.
  5. Drain the pasta and serve with the sauce over the top.
