Ingredients

  • 130 milliliters vegetable broth
  • 1 red onion
  • 1 egg yolk
  • 125 grams gorgonzola cheese
  • 2 tablespoons port wine
  • salt

Directions

  1. Add the vegetable broth to a saucepan set to medium heat. Add the onion and cook in the broth for approximately 10 minutes on medium heat. Remove from the heat and allow to cool slightly.
  2. Add the onions and broth to a blender and puree until smooth.
  3. In a bowl, combine the cheese and egg yolk until creamy. Add the wine and season with a pinch of salt.
  4. Add the cheese mixture to the onion sauce in the saucepan. Bring it to a boil and cook for a few minutes.
  5. Use this sauce with chicken or other meat dishes.

I have made thousands of different roasted chicken recipes in the past and none of them created such tender and juicy chicken like this recipe did. The red onions were a great combination and were in no way overwhelming. The gorgonzola sauce made the entire dish pop with its infusion of flavors. I will be making this 4 star recipe again very soon.
