Ingredients

  • 2 tablespoons coconut oil (plus extra, as needed)
  • 1/2 red onion (diced)
  • 2 inches ginger (knob of, peeled and finely minced)

  • 3 cloves garlic (minced)

  • 14 ounces diced tomatoes (can stewed or fire-roasted)
  • 1/2 cup pearl barley
  • 3/4 cup red lentils
  • 1 teaspoon kosher salt
  • 1 cup coconut milk (lite, if you'd like)
  • 1 fresh spinach (loosely packed cup, sliced chiffonade)
  • 1 scallions (thinly sliced, for garnish)
