Ingredients

  • 3 eggs (separated)
  • 200 grams flour
  • 1 teaspoon baking powder
  • 200 grams sugar
  • 1 tablespoon butter
  • 200 milliliters milk
  • fruit (mixture, cranberries, currants)
  • raisins

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Beat the egg whites to stiff peaks.
  3. Sift the flour with the baking powder.
  4. Beat the sugar with the butter, add the egg yolks, and beat to whitish mixture.
  5. Gradually, add the milk, and flour (sifted with baking powder).
  6. Mix in the stiff egg whites, red fruit, and raisins.
  7. Pour in muffin pan greased with butter.
  8. Bake for 20 minutes.

I am always excited to find a good muffin recipe. I left out the raisins, because my family are not big raisin fans. I used cranberries, raspberries, and blueberries. These muffins are so yummy, and are great for breakfast on the go, or to have with a morning cup of coffee.
