  • 3 pounds beef roast (I used a chuck eye roast)
  • 1 1/2 cups beef stock
  • 1/3 cup balsamic vinegar
  • 1/3 cup cabernet sauvignon (or other dry, red wine, add extra 1/3 C stock if not using wine)
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons soy sauce (or coconut aminos)
  • 1 1/2 tablespoons worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 1/2 teaspoons garlic powder (or 3 chopped garlic cloves)
  • 3 teaspoons salt (to taste)
  • 1/4 cup brown sugar substitute (I used Ideal Brown)
  • 1 teaspoon dried parsley (or around 3T fresh chopped parsley)
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon red pepper flakes (or more if you like it spicy)

    This is really freaking good! About the the only change I made was to use Kettle & Fire’s Thai Curry Bone broth mixed with water in place of the beef broth. It added a bit more kick and umami. We ate this for 4 days straight and never got tired of it. This recipe made it into my Evernote recipe notebook-truly a keeper!
