Great! Totally would do it again
This was good but i should have used a smaller cucumber. The bigger cucumber I used made it very watery and I should have added 2 avocados to amp up the creamy! There is something missing in this recipe but cant put my finger on it. In all fairness it is a nice substitute for pasta salad. very tasty!

Tasty and fresh! I lightly seared the zucchini in a pan and added some chicken. Yum!

Delicious and creamy. A great side dish! It was really easy to make in a short period of time and we had all the ingredients in our kitchen already.
