Love it!! Turns out quite impressive for how easy it really is. I use a mandoline slicer for quick and consistent slicing - just watch your fingers! While it’s not stated in the directions, I add 1 red onion also sub our favorite Rinaldi pasta sauce for the one in the recipe.

I’ve never had ratatouille before today. You remember in the movie Ratatouille when the food critic takes a bite of dish, and he is immediately transported back to childhood, and he delights with pleasure eating the dish? I now know what that experience feels like! This dish is absolutely delicious! Will definitely keep this in my meal rotation .

It was really good and very easy to make for a beginner. I would have preferred it a little more spicy but that's just a personal taste.

Delicious! I was afraid the veggies wouldn't be thoroughly cooked, but they were just right! My roommates who aren't into vegetables, actually ate it Thank you for this amazing dish!

MarkLouise W. 17 Mar 2017
Visually beautiful! Delicious just as it is! I've sliced the veggies up the night before to save time.
Michael H. 25 Jan 2017
Surprisingly good! I was a bit skeptical that such a simple recipe could taste so great, but luckily I was proven wrong! I followed the directions exactly except that I cooked it an extra 10 minutes without foil to wilt the vegetables just a bit (like in the picture). I definitely will be making this again.
Miller 11 Jan 2017
loved it. Everone kepps askinh for the recipe! I slightly tweaked this and made my own tomato paste!

Great dish! Really flavorfull and easy to make, the olive oil tastes amazing with the veggies and the dish gets you so full!! I will be repeating it!
Amanda Feriante 29 Oct 2016
This tastes really good! I used ground thyme instead of the more expensive, fresh stuff. Most of the flavor is in the onion, garlic, and tomato paste sauce (some really good flavors)! I also used tinfoil instead of parchment paper, and it still worked out. To avoid soggy eggplant, I used half a cup of water instead of 3/4 cups for the sauce. It worked prefectly!
Teddy Tedz T. 28 Sep 2016
Loved all the flavors! I just need to remember to peel the squash next time (I didn't like it's taste unpeeled). I also didn't have tomato paste so used the alternative method. But it was so delicious and apart from the prep time it didn't take much at all.

Wow! This was a big hit for my family and me. And such a beautiful presentation. I followed the recipe exactly with no changes or substitutions. 😋 I have had my family request this many times. Thank you for sharing!!
