Baking homemade cookies from scratch and giving them to someone is the perfect way to say you appreciate them. These Raspberry, White Chocolate Chip Cookies are decadent and rich, and take only 35 minutes to prepare. There are only 15 cookies per recipe, so you might want to make a second batch for yourself. This recipe combines decadent chocolate with sweet raspberries. It is the perfect combination for a sweet treat.

Ingredients

  • 150 grams unsalted butter
  • 1 eggs (plus 1 egg yolk)
  • 110 grams granulated sugar
  • 110 grams brown sugar
  • 1/2 teaspoon baking soda
  • salt
  • 200 grams flour
  • 80 grams white chocolate chips (or pieces)
  • 100 grams raspberries (fresh or frozen)

Directions

  1. Preheat oven to 200 degrees Celsius.
  2. Heat the butter in a small saucepan until it melts and smells like hazelnuts.
  3. Strain trough a fine sieve and pour into a bowl, add sugars and mix.
  4. Add the eggs and mix well to obtain a smooth batter.
  5. In an another bowl mix flour, baking soda and a pinch of salt.
  6. Gradually add the flour mixture into the butter-sugar-egg mixture.
  7. Finish by gently incorporating white chocolate chips and frozen raspberries.
  8. On a baking sheet lined with parchment paper, drop little mounds of dough with a spoon spacing them apart.
  9. Bake 10 to 12 minutes.

Excellent recipe ,I did add 1 teaspoon of vanilla to this recipe !! I would perhaps double the recipe in the future as well . Will definitely be a favorite .Love to try new recipes and these are delicious .

These are hands down one of the best cookies I have ever eaten. The white chocolate paired with the raspberry is exceptional. Be sure to pull them out a little before they're done or they will be too hard.
