Ingredients

  • 3 eggs
  • 2 cups sugar
  • 1 cup plain yogurt (without sugar)
  • 3 cups flour
  • 1 cup vegetable oil
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 1 box raspberries (fresh or frozen)

Directions

  1. Beat the eggs, add the sugar little by little and then the flour, salt, baking powder and oil. Add the yogurt little by little while continuing to mix the batter.
  2. Gently fold in the raspberries.
  3. Grease and flour two baking pans, divide the batter evenly between them and bake at 180 for 1 hour.
  4. Sprinkle with powdered sugar if desired.

Yogurt isn't usually the first ingredient you think of when baking bread, but this really does the trick. It creates such a nice texture that leaves the bread moist. Raspberries work really well with the overall flavor. This is a sweet treat bread that I can see making again and again.
