Ingredients

  • 1 chicken breast (on bone)
  • 2 carrots (1 roughly chopped and 1 sliced)
  • 2 centimeters ginger (chopped)
  • 2 chilli peppers
  • 1 tablespoon oil
  • 100 grams shiitake mushrooms (sliced)
  • 100 grams bean sprouts
  • 1 red pepper (sliced)
  • 200 grams noodles (Japanese wheat)
  • 250 grams pak choi (cut into strips)
  • 314 milliliters bamboo shoots (drained)

Directions

  1. Bring 4 cups water to a boil in a large saucepan on high heat. Add chicken, chopped carrot, ginger and chili peppers. Reduce heat to low and simmer for about 30 mins.
  2. Remove the chicken from the pan. Remove the skin and chop the meat into small pieces. Pour the liquid through a sieve into a bowl.
  3. Heat oil in the same pan on medium-high heat. Add carrot slices, mushrooms, bean sprouts and pepper and sauté 3 mins. Add cooking liquid and bring to a boil. Add noodles and cook for 4-5 mins, adding bok choy, bamboo shoots and diced chicken after 2 mins.
