Ingredients

  • 130 grams milk
  • 100 grams butter (softened)
  • 2 eggs
  • 75 milliliters lemon juice
  • 320 grams flour
  • 200 grams sugar
  • 2 teaspoons baking powder
  • salt

Directions

  1. Preheat the oven to 180C.
  2. Combine the milk, butter, eggs, and lemon juice in one bowl.
  3. Combine the flour, sugar, baking powder, and a pinch of salt in another bowl.
  4. Place the dry ingredients in the bowl with the wet ingredients and stir quickly to combine.
  5. Divide the batter into three bowls: add a few drops of red food coloring to one bowl, a few drops of blue food coloring to the second bowl, and leave the batter in the third bowl as is.
  6. Fill the muffin liners first with approximately 1 tablespoon of each of the three batters, first the red batter, then the blue batter and then the plain batter.
  7. Bake the muffins for approximately 25 to 30 minutes.

The ingredients do not list food coloring, so go on and add red and blue food coloring to the grocery list if you want to make them. The muffin is light and fluffy. I snuck in a couple tablespoons of coconut oil for a healthy touch. These were a hit at my 5-year-old's rainbow themed birthday party.
