A great way to cheer up a gloomy day, these rain cookies are fried to perfection and coated in cinnamon and sugar, no need to turn on the oven today. Crispy on the outside and moist in the middle, these fried cookie balls are packed with flavor.

Ingredients

  • 2 eggs
  • 4 tablespoons sugar
  • 200 grams flour
  • 200 grams cornstarch
  • 1 teaspoon baking powder
  • 2 tablespoons aguardiente (or hard liquor)
  • 1/2 cup tea (coconut milk)
  • 1 teaspoon ground cinnamon

Directions

  1. Place all ingredients in a bowl and whisk well.
  2. Heat oil in a skillet, place spoonfuls of dough into the oil, and fry until golden.
  3. Remove from pan and place on paper towels to absorb excess oil.
  4. Coat with sugar and cinnamon.

Delicious fried cookie balls! I didn't use the hard liquor – I used water. I like to make my cookies friendly for everyone, but other than that, I followed the recipe list exactly. They are fantastic. Crispy outside and nice, moist inside. They are sweet, and the sugar/cinnamon dusting on the outside really pull it together.
