Quinoa with Tomatoes and Basil

Ingredients
- 150 grams quinoa
- 300 mL water
- cherry tomatoes (as needed)
- basil
- extra-virgin olive oil
- salt
- ground black pepper
Directions
- Wash the quinoa under running water to eliminate the bitter exterior. Then soak it in water for several hours and rinse it again under running water.
- Bring the water to a boil and cook the quinoa for 10 to 15 minutes.
- Cover the pot and let the quinoa rest for 5 minutes.
- Once the quinoa has cooled, add the tomatoes cut into quarters and a generous amount of fresh basil.
- Season to taste with salt and pepper, drizzle with extra virgin olive oil and serve.
