Ingredients

  • 1/3 cup quinoa
  • 1/4 pound green beans (chopped)
  • 1/4 pound frozen peas
  • 1 medium zucchini (diced)
  • 5 tablespoons olive oil
  • 2 spring onions (finely sliced)
  • 6 sprigs fresh cilantro (chopped)
  • 8 medium tomatoes (tops cut off and insides discarded)

Directions

  1. Preheat the oven to 400°F. Cook the quinoa in boiling salted water as per the package instructions then drain and set aside. Cook the beans in boiling salted water for 3-4 mins, add the peas and zucchini and cook for another 2 mins then drain. Mix with the quinoa, 2 tbsp oil, the spring onions and cilantro. Season.
  2. Fill the tomatoes with the quinoa mixture, put the tops back on, transfer to a baking dish, drizzle with 3 tbsp oil and bake for 20-25 minutes.
