  • 1 cup raw hazelnuts (roughly chopped)
  • 2 whole mango (peeled & seeded, finely diced)
  • 4 cucumber (finely diced)
  • 5 scallions (thinly sliced diagonally)
  • 1/4 bunch flat leaf parsley (stems removed, okay if some stems remain, finely chopped)
  • 1/4 bunch fresh mint (stems removed, finely chopped)
  • 2 kosher salt (big pinches, about 2 teaspoons)
  • 1 cracked black pepper (big pinch, about a teaspoon)
  • 2 tablespoons extra-virgin olive oil
