Ingredients

  • 1 2/3 cups quinoa flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • 1 eggs
  • 3/4 cup bananas (mashed ripe)
  • 1/3 cup milk (dairy or nondairy)
  • 1/4 cup cane sugar (natural)
  • 1/4 cup coconut oil (warmed)

Directions

  1. 11. Preheat oven to 375 degrees F.
  2. 22. In a large bowl, whisk together quinoa flour, baking powder, sea salt and cinnamon.
  3. 33. In a separate bowl, whisk together egg, bananas, milk, sugar, and coconut oil until well blended.
  4. 44. Add the banana mixture to the flour mixture and stir lightly until just blended. Do NOT over stir.
  5. 55. Scoop the mixture into your muffin trays. I love my nonstick mini muffin-cupcake pan from Crate & Barrel.
  6. 66. Bake for 35-40 minutes until the muffins are browned or until a toothpick inserted into the center comes out clean.
  7. 77. Let the muffins cool down and remove from the muffin tray.
