  • 2 cups water
  • 1/2 cup onion (diced)
  • 1 ear sweet corn kernels (Dandy ®, sliced off)
  • 1 cup sliced black olives
  • 3/4 cup roasted red bell pepper (chopped)
  • 2 cups spinach (chopped)
  • 1 cup black beans (cooked, from a can, drained. Add the full can if desired.)
  • 2 limes (juiced + pinch of lime zest)
  • 2 tablespoons agave syrup
  • 1/2 teaspoon chipotle powder (this adds heat and smokiness)
  • 1/2 teaspoon ground cumin
  • 1 tablespoon extra-virgin olive oil (If you like a richer dressing, you can add another tablespoon)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • hot sauce (Topping:, or salsa)
  • 1 avocado (diced)
  • leafy greens (Additional:, spinach or kale)
