Quince-Ginger Crumble


3 quinces
lemon juice
2 tablespoons sugar
1/2 teaspoon ground ginger
100 grams flour
50 grams sugar
50 grams butter
1/2 teaspoon ground ginger


1Preheat oven to 360°F.
2Rinse and peel the quinces. Quarter and thinly slice. Sprinkle with a few drops of lemon juice. Add 2 tablespoons of sugar and 1/2 teaspoon of ground ginger, and mix well. Place this mixture on the bottom of a glass baking dish.
3To make the crumble, combine the flour, 50 grams of sugar, cold butter (cut into cubes), and 1/2 teaspoon of ginger. Mix with your hands until crumbly. Cover the quinces with this mixture, and bake for about 25 minutes until golden.
4Serve warm, plain or with a scoop of vanilla ice cream.
