Description

This moist no butter cake will have you begging for another slice. Quince and brown sugar pair beautifully to create a warm and delicate flavor. Apples can be substituted if quince is hard to find. Great for dessert or breakfast.

Ingredients

  • 320 grams flour
  • 1 teaspoon baking powder
  • 4 eggs
  • 200 grams brown sugar
  • 2/3 cup olive oil
  • 1 quinces
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground fennel
  • chopped nuts (for decorating)

Directions

  1. 1Preheat the oven to 180 degrees Celsius.
  2. 2Grease a round pan with margarine and flour.
  3. 3Begin chopping the quince by using a food processor or even a blender (in this case add a little of the recipe's olive oil).
  4. 4Set aside.
  5. 5Add the eggs and the sugar and beat well until it becomes a fluffy mixture.
  6. 6Add the quince, the cinnamon, the fennel and the olive oil and mix again.
  7. 7Finally add the flour and the baking powder.
  8. 8Stir without beating until it becomes a homogeneous batter.
  9. 9Place the dough in the pan and sprinkle with coarsely ground nuts.
  10. 10Bake for 30 minutes.
  11. 11Insert a toothpick, if it comes out clean remove and unmold.
