Ingredients

  • 1 boneless skinless chicken breasts
  • 2 cups broccoli florets
  • 2 cloves garlic
  • 4 ounces brown rice noodles
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil

Directions

  1. 1Cook the brown rice noodles according to the directions on the packet.
  2. 2Crush the garlic.
  3. 3Thinly slice the chicken.
  4. 4Pour the sesame oil into a non-stick pan, and turn the stove on top medium heat.
  5. 5Add the crushed garlic to the pan, and cook until golden brown.
  6. 6Add the chicken to the pan, and brown all over.
  7. 7Toss the broccoli florets into the pan. Stir-fry for a minute or so, then add the soy sauce. Stir-fry for another 2-3 minutes.
  8. 8Add the brown rice noodles to the pan. Fold the chicken and broccoli into the noodles. Continue to cook the stir-fry and noodles until all the ingredients are warmed through.
