Description

This quick topping is great for sweetening just about any dish. The rich flavor of caramel complements desserts, meats, and salads. You get the richness of cream and butter, mixed with the sweetness of sugar.

Ingredients

180 grams granulated sugar
2 tablespoons corn syrup
2 tablespoons water
3 drops lemon juice
120 grams heavy cream
25 grams salted butter

Directions

1In a large glass bowl, add sugar, syrup, water and lemon juice.
2Cook in the microwave at high for 3 1/2 minutes.
3Lower microwave power to 75% and keep cooking for 1 minute until boiling.
4Keep cooking, 30 seconds at a time, until the caramel is amber in color. (1 to 2 minutes).
5Heat the cream in the microwave for 30 seconds and gradually add it to the caramel. The mixture will bubble.
6Then add the butter and mix. Let cool before using in your desserts.
