  • 3 eggs
  • 200 grams sugar
  • 100 grams butter (or margarine)
  • 100 grams kefir (thick)
  • 170 grams cake flour
  • sea salt (with bee pollen, or similar)
  • 1 teaspoon baking powder
  • 50 grams grated coconut

Directions

  1. Preheat oven to 170°C (approximately 340°F).
  2. Grease and flour a pie dish.
  3. Place eggs in the Thermomix cup, add the sugar and set for 1 min/temp 50°C (approximately 125°F)/speed 3.
  4. Add butter and kefir and mix for 15 sec/speed 3.
  5. Add flour, a pinch of salt, baking powder, and coconut and set for 6 sec/speed 3.
  6. Finish mixing flour with a spatula. Pour the batter into pie pan and bake in preheated oven for 30 minutes.
  7. Remove from oven, remove from pan and dust with powdered sugar.
