Description

This Quick Cake can be made in quickly in a blender and there is a hidden surprise within it, watercress. The addition of watercress adds some leafy green protein and also makes the inside of the cake a lovely light green color, ideal for St. Patrick's Day. This simple cake makes a great base for you to experiment with icings, frostings, or other garnishes. To keep it classy, sprinkle powdered sugar on the finished cake after it has cooled.

Ingredients

  • 1 bunch watercress
  • 3 eggs
  • 2 cups sugar
  • 1/2 cup butter (liquid)
  • 2 cups flour (no-yeast)
  • 1 tablespoon baking powder
  • vanilla sugar

Directions

  1. 1Preheat oven to 180 degrees Celsius.
  2. 2Grease a bundt pan with butter, and sprinkle with flour.
  3. 3Thoroughly wash and dry the watercress, remove the stalks if you want.
  4. 4Beat the eggs with the sugar until mixture doubles in volume, then add the liquid butter and the watercress.
  5. 5Beat until the watercress blends in completely. Place this mixture in the blender, then add the sifted flour and baking powder, and blend on minimum speed.
  6. 6Pour mixture in cake pan, and bake for 45 minutes, or until a toothpick inserted in the middle comes out clean.
  7. 7Unmold, and coat the top with vanilla sugar.
