Brown rice is a healthy side dish that goes with many dishes. It can be kept light by adding no butter or oil to it. I use it in black bean tacos. First, I cook the rice using this recipe. Then, I heat up whole wheat tortillas, and spread warm refried black beans on them. Next, I top the beans with the brown rice, some sour cream, and a little salsa or pico de guillo. They are so delicious.
