Ingredients

  • 4 tortillas
  • 1 red onion (small, thinly sliced)
  • 150 grams mushrooms (thinly sliced)
  • 1/2 chilli flakes (teas dried)
  • 1 handful coriander (chopped)
  • salt
  • pepper
  • 2 cups mild cheddar (grated)

Directions

  1. 1. Fry the onions, mushrooms and chilli until soft. Season with salt and pepper.
  2. 2. In a non-stick frying pan add one tortilla, spread with half the mushroom mixture, half the coriander and 1 cup of the cheese. Cover with another tortilla and cook on a medium to low heat until sides are browned and the cheese is melted.
  3. 3. Remove from pan. Repeat for the second tortilla.
  4. 4. Serve tortillas warm with sauce of your choice.
  5. Quesadillas can be enjoyed for breakfast, lunch or dinner. As long as you have cheese, you can add any ingredients you like such as tomato, mushroom, ham, chicken, shredded pork, refried beans etc. Serve with guacamole, sour cream or any sauce which takes your fancy.
