Ingredients

  • 150 grams all purpose flour
  • 1 teaspoon baking powder
  • salt
  • 1 medium egg
  • 0.87 milliliters milk
  • 50 grams extra-virgin olive oil
  • 1 can tuna packed in oil
  • 150 grams pumpkin (steamed)
  • 80 grams cheese (smoked scamorza)
  • 2 tablespoons butter

Directions

  1. Preheat the oven to 180C.
  2. Puree the pumpkin and add a knob of melted butter.
  3. Cut the scamorza cheese into small cubes and break up the tuna.
  4. Combine the flour, baking powder, and a pinch of salt in one bowl, and, in another bowl, combine the egg, the milk, and the oil.
  5. Pour the liquid ingredients onto the dry ingredients and stir quickly to combine.
  6. Add the tuna, the cheese and the pumpkin and mix briefly.
  7. Fill muffin liners to 3/4 full and bake for approximately 25 minutes.

I was surprised that the tuna and pumpkin flavor profiles paired so well together. I replaced the scarmorza cheese with mozzarella, and the muffins were cheesy and good, but next time I will try to locate some smoked scarmorza as called for by the recipe. The smokey flavor likely provides a background taste that may amp up the taste.
