Ingredients

1 onions (large, chopped)
2 garlic cloves (chopped)
olive oil (as needed)
1 bay leaf
2 tomatoes (ripe, diced and de-seeded)
1 slice pumpkin (diced)
5 ounces white wine
1 turnips (diced)
2 carrots (sliced)
1 stalk celery (sliced)
2 cans red beans (cooked)
1 vegetable stock
1 chili
1 head kale (chopped)
1 bunch parsley

Directions

1Saute the onion and garlic cloves in a splash of olive oil.
2Add the bay leaf and, as soon as the onion is translucent, stir in the tomatoes.
3Then add the pumpkin. As soon as the pumpkin is softened, stir in the white wine to cool it down.
4Add the turnip, carrots, celery, and beans and saute until they are softened.
5Stir in a splash of water and vegetable broth. As soon as the mix begins to boil, add the chili and kale.
6Once the mixture is well cooked, set it aside.
