  • 6 carrots (dutch, trimmed, fronds reserved)
  • 300 grams pumpkin (Kent, seeded, peeled, cut into 3cm chunks)
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon ground turmeric

  • 1 cup red lentils (dried)
  • 1.5 liters vegetable stock
  • 8 sprigs thyme
  • 5 1/2 teaspoons ginger (nely grated)
  • Greek style yoghurt (to serve)
