Full of sweet harvest flavor, this recipe for Pumpkin with Piloncillo is a great dessert recipe for autumn. Piloncillo, or panela, is an unrefined whole cane sugar in solid form typically used as a sweetener in Central and Latin America and is sold in Mexican food stores. Flavored with cinnamon, this pumpkin dessert is rich in sweet and warm flavors. Serve with a thick cream sauce or with a scoop of vanilla bean ice cream.

Ingredients

  • 150 grams piloncillo
  • 2/3 tablespoon molasses
  • 1 cup water
  • 1 cinnamon stick (small)
  • 800 grams pumpkin (coarsely chopped)

Directions

  1. In a large pot, add the water, piloncillo, and cinnamon.
  2. Boil until the piloncillo has dissolved, stirring occasionally.
  3. Add the pumpkin with the pulp facing downward.
  4. Boil over medium heat until the pumpkin has softened and the syrup has thickened. Be careful not to burn the syrup.
  5. Serve accompanied by milk.

I love new pumpkin recipes. This was so rustic and beautiful. I added some pecans along with some syrup and it didn't disappoint!
